Blueberry Tarts

Small, fresh and tasty treats for this beautiful summer weather we're having. 
Thay take about an hour and a half to make! 

What you need: 
For the crust: 
120g butter that is room temperature
1dl confectioners sugar
3dl flour 
1 egg yolk

For the filling: 

4.5dl milk
1 teaspoon vanilla powder 
7 egg yolks
1.5 dl sugar
2 tablespoons cornstarch (maizena)
2 tablespoons unsalted butter (room temperature)

For the topping: 

(or any other fruit or berry that you might want to use)

How you make them: 

Start with the crust, 

Step1: Preheat your oven to 180 degrees Celsius.
Step2: Mix all the ingredients together, wrap it in saran wrap and let it set in the refrigerator for 20 minutes. (If you want to you can start making the filling now to save some time) 
Step3: Roll out the dough to a big circle that is about 4mm thick and then cut out small circles and place place them in small tart crust pans and use a knife to remove the dough that is not deeded along the edges.
Step4: Poke small holes in the bottom with a fork and then bake them in the oven for about 15 minutes till they're golden brown.
Step5: Take them out, let it cool and turn of the oven because you won't be needing it anymore. 

Continue with the filling: 

Step6: Pour the milk into a medium sized sauce pan and add the vanilla powder, heat the milk until it starts to boil and then put it aside and let it cool. 
Step7: In a bowl whisk together the egg yolks, sugar and cornstarch until smooth. 
Step8: Add the milk one dl at a time while whisking constantly. 
Step9: Pour it all back into the sauce pan and cook on medium heat until the mixture thickens while whisking constantly. 
Step10: When the mixture has thickened pour the pastry cream into a bowl and put it in the refrigerator until it has cooled. 

Assemble them:  
Step11: When the pastry cream has cooled put some of it in a piping bag and fill the crusts.
Step12: Put the blueberries on top and then they're done! 

You can store them in the refrigerator for up to two days the flavors will stay there but the crust might go from hard to soft as time goes on!
