2014 Favorites

Here are some of my favorite posts from this past year!

Baking 

My childhood Cheesecake. You can divide it into two layers, you have the creamy-dreamy top half and then the bottom half is where you find all the cottage cheese and almonds.

 I just can't get enough of macaron tarts. I always thought they we're so pretty and elegant. I also thought that they we're really complicated to make, turns out that it's not that hard. 

Lemon meringue pie as always been one of my absolute favorite desserts! This recipe is no exception. 

Candy 

Sometimes things just work out even if you planed for the result to be totally different. My homemade Toblerone with hazelnuts was one of those cases. 

These raspberry macarons are really fresh and fruity, perfect for spring and summer! 

Nutella truffles. The reason why these are on my favorites list is because they are so incredibly simple to make but are so delicious! And who doesn't love Nutella?! 

Food

And then there's the Club bagel. The recipe is inspired by the club bagel that I always get at one of my favorite lunch places in Luxembourg Coffee Lounge. I am really happy with how it turned out! 

The shrimp seviche is one of my favorite appetizer. Especially for spring time. 
All the flavors complement each other so well and all the colors are just so beautiful! 

The red chicken pasta is a super simple dish that only takes about 15 minutes to make. 

DIY 

My marble Macbook cover is probably my favorite post of the year. Every time that I look at my computer I get happy because I think that it turned out so great! 

Heart shaped card holders that you can use as place card holders or just to place any type of card with a message on it. 

The candy bags are a fun little detail that you can use all year around!

2 Years!


It's insane that two years have already gone by! 

During the past year I tried to expand the blog a bit. I started the Facebook page for the blog that has been quite a boost! I also made my first youtube video just for the fun of it! 

Unfortunately there were a lot of other things around me taking up my time and focus these past months. (Things like my job, different events and school of course). Therefore I had to take a tiny step back from blogging and baking. 
What this has taught me is that instead of just giving up on the blog because I don't have the time I'm going to start taking it more seriously. Start planning ahead and instead of having a lot of posts maybe having a fewer amount but that are planed and more serious in a way. 
I'm really looking forward to this next year and can't wait to share more recipes and fun DIY's with you!

Last but not least I also want to wish you all a belated Merry Christmas and I really hope that you are enjoying your holidays! 
I celebrated Christmas with my family and then went to Paris with my sister for two days!
Now I'm going to start planning the new years festivities.

Chocolate Tart

Did anyone just scream ''chocolate!!''? Well that's what my friend did when she saw these and yeah, that is what it is.. This dessert is quite heavy but it is the perfect ending to a meal, just make sure that it is a small portion! You can serve it with fruit on top, whipped cream or just like this! Simple and elegant. 
These take about 1 hour and thirty minutes to make. 

What you need:  
For the crust:                                                   
120g butter that is room temperature               
1dl confectioners sugar                                          

2 tablespoons cocoa
3dl flour 
1 egg yolk


For the topping: 
300 62% chocolate
1.5 dl powdered sugar
2dl heavy cream
2 large egg yolks
3 tablespoons unsalted butter


How you make them: 
Start with the crust, 
Step1: Preheat your oven to 180 degrees Celsius.
Step2: Mix all the ingredients together, wrap it in saran wrap and let it set in the refrigerator for 20 minutes. 
Step3: Roll it out to a big circle that is about 4mm thick and then place it in small pans with loose bottoms and use a knife to remove the dough that is not deeded along the edges.
Step4: Poke small holes in the bottom with a fork and then bake them in the oven for about 15 minutes till they're golden brown.
Step5: Take them out, let them cool and turn of the oven because you won't be needing it anymore. 

Continue with the filling: 
Step6Chop the chocolate into small pieces and combine the chocolate and the powdered sugar in a heatproof bowl. 
Step7: In a saucepan bring the cream to a gentle simmer and then add it to the chocolate and stir until the chocolate has melted
Step8: Place the bowl with the mixture on top of a sauce pan with simmering water in it until the mixture has become smooth.
Step9: Whisk the egg yolks. In a separate heatproof bowl take about 1dl of the chocolate and mix it together with the eggs, then pour the mixture with the eggs into the other mixture and whisk to combine it all well. 
Step10: Fill the crusts with ganashe and then put them in the refrigerator until you serve them.

DIY Candy bags

I got a little bag from my good friend Gabriella that was filled with different kinds of soap from Lush.
I thought that it was cute and wanted to do something similar for my sister and her family but instead of soap i filled with homemade candy. 
I made some candy (using this recipe) and then I didn't have any bags to put them in so I made some myself. This is how I made them. 

What you need: 
Wrapping paper (It's best if it's made out of paper and isn't shiny or covered with plastic, it will hold it's shape better that way). 
A pen or pencil
Ruler
Scissors 
Glue
Something to fill the bags with. 

How to make them: 
Start with the sides and bottom. 
Step1: Cut out a piece of wrapping paper that is about 30x40cm.
Step2: Start by drawing a line that is 6+7+6+7cm long (so 26cm). Make sure that you have about 8cm to spare below the line. Draw a dot on the line after 6cm, another dot after 7cm, again after 6cm. 
Step3: Draw a line from each dot that is directed upwards and that is 11cm and then also one on each side of the line. 
Step4: Draw another  26cm long line on top so that you now have four rectangles
Step5: Under the second rectangle from the left you are now going to draw another rectangle. Where you drew the dots you are going to draw two lines that are directed downwards and 6cm long. Then connect them with a 7cm long line at the bottom. This is going to be the base that the bag stands on. 

Continue with the lid and what connects the sides. 
Step6: On top of the square to the right you're now going to make a little lid or flap that will make you able to close the bag. Draw a dot 1cm in from each side and then draw a line upwards from each dot that is 2cm long.
Step7: Connect the edges so that you have the sides for the lid. 
Step8: Now you are going to draw 4 smaller flaps. 3 underneath of the sides and then one on the side of the square to the right. (look at the picture, that ill make it a lot easier!)
Step9: Cut the whole thing along the sides. 

Time to start folding. 
Step10: Start folding each and every line that you have drawn. Also fold the rectangles that are furthest to the left and second to the right right down the middle. 
Step11: Glue the first flap together with the bottom square. Make sure that they're on the inside  and that all the sides are aliened so that you don't have to see them on the outside. 
Step12: Continue with the rest of the flaps. 
Step13 and 14: The end result should look like this.

Step15: Now you can fill it with your Christmas candy. I used this recipe and wrapped each piece with baking paper.  Now You just have to close the lid. You can seal it with tape, glue or wax like I did.

Five Details

How I spend a lot of my free time. Either on my computer, on my phone, baking or finding inspiration for all kinds of things (fashion, interior design or cooking) in magazines. 

Flowers really are an understated gift. I rarely have fresh flowers at home and they just do so much for your space. I love both giving and getting flowers as a gift (obviously I only give them to people who I know will enjoy them and take care of them). 

Sometimes I get creative. This wall is one of my favorite parts of my room. It's filled with different memories. Postcards, a cap that means a lot to me, photos, the luxembourgish flag and a bunch of paintings and drawings that I've made, drumsticks, bunny ears and so much more! 

A daily reminder to say yes more often. 

Starting to miss summer and spending time with my family in our summer house. The room behind this window is where we always eat our meals (if we're not eating outside). I just love to sit around that table, especially in the evening when my sisters kids have all gone to sleep and it's just us grownups left. Each time I learn something more about them. 
This summer was extra special because my grandparents were there. They're both over 90 years old and they just know so much and have so many stories to tell.

This years Gingerbread House


A lot of people don't have the patience for things like this but for me this is like therapy!  
It may have taken me five hours to complete this little project but it's not like i had any other plans that day. Decorating gingerbread houses was never a tradition in my family, well at least not when I was a kid. For the past 6 or 7 years I have made it a traditions and made one each year and I love to see how they just look better and better for each year! 

I bought the gingerbread pieces at a store and then put them together with caramelized sugar
For the piping details I just mixed confectioners sugar with water. 
Start with 1 tablespoon water and 1.5dl confectioners sugar and mix it all together. 
Continue to add sugar till you have reached a consistency that is a bit thicker then glue. 
Now you just have to pour it into a piping bag with a tiny tip and start piping! 

It becomes a lot easier (and prettier) if you pipe the details on the side of the house before you put the house together.

Apple Pie

Apple pie is such a classic dessert that I always go back to during fall and Christmas times. 
This recipe takes about 1,5 hours to make. I would serve it warm with either vanilla ice cream or whipped cream on the side. 

What you need:
for the dough:
3 dl flour
125g butter
2 tablespoons sugar
2 tablespoons water

for the filling:
5 red apples
50g butter
2 teaspoons cinnamon
1 teaspoon cardamom
1 dl sugar 

How you make it:
Start by making the dough: 
Step1: Combine the the ingredients for the dough.
Step2: Wrap the dough in foil and put it in the refrigerator for at least 30 minutes.

Continue with the filling:
Step3: Wash your apples and cut them down the middle.
Stap4: Cut the core out of all your apples, slice them in thin slices and place them in a large bowl.
Step5: Melt the butter then take it of the heat and add the sugar, cinnamon and cardamom.
Step6: Pour the melted butter over the apples and make sure that all the apples are covered in melted butter.
Step7: Pour the apples into a large frying pan and place it on medium heat so that the apples cook in the butter and become soft. Cook them for about 10 minutes.

Step8: Preheat your oven to 200°C
Step9: Butter a pie dish.
Step10: Sprinkle some flour on a flat surface and roll out your dough so that it is 4-5mm thick.
Step11: Place the dough in your dish and poke small holes on the bottom of the crust.
Step11: Bake your crust for 10 minutes then take it our and fill it with the apples.
Step12: Bake the pie for another 30-40 minutes and then serve it warm with some ice cream or whipped cream. 

I also made smaller pies. Just because I felt like it.

Started of the fall season with making an apple pie!  //  Cavring a pumpkin for Halloween has always been a tradition in my family so even if I have moved I still always carve one. I am very happy with how this one turned out, must be one of my all-time favorites!  //  So happy that my friend Gabriella has moved to Malmö! Every time I go to her place she asks if she can do my makeup and I never say no!

Homemade bread

This bread is just normal white bread but I just think that it is just so much fun to eat something that you know that you've made yourself. It is really delicious and super simple to make! 
It takes a total of 3 and a half hours to make but 2 hours and 20 minutes of that time the dough is rising. 

What you need: 
50g yeast
2 teaspoons salt
2 tablespoons honey
6 dl lukewarm water
2dl graham flour
11 dl flour

How you make it: 

Step1: Crumble the yeast into a large bowl and then add the salt and honey
Step2: Pour the water over the yeast one dl at a time.
Step3: Add the graham flour and 9 dl of the flour.
Step4: Put a kitchen towel over the bowl and let it rise for 2 hours.
Step5: Preheat your oven to 250°C
Step6: Spread out some of the flour on a flat surface and knead the dough then shape it to a loaf and put it on a sheet of baking paper and put the kitchen towel over it and let it rise for another 20 minutes. 
Step7: Use a sharp knife tto make several slashes in the top.
Step8: Bake the loaf at 250° for 15 minutes and then lower the heat to 200° and bake for another 25 minutes. 
Step9: Take it out and let it cool.

Lemon and vanilla cupcakes

Last Saturday my sister came for a quick visit and I really wanted to make something that she could bring home to her kids. I wanted to make something that looked fun and something that was just for them so I went with colorful cupcake liners and marzipan toppers with their names on them so that could feel that it was just for them. 
I also went with a lemon cupcake that is really natural since they're very picky eaters! 
They take about one and a half hours to make. 

What you need: 
For the cupcake: 
3 dl flour 
1.25 teaspoons baking powder
0.5 teaspoon baking soda
0.5 teaspoon salt
2 large eggs
1.5 dl sugar
4 teaspoons vanilla sugar
1 dl olive oil
2 tablespoons lemon juice
1 dl milk

For the frosting
120 grams softened and unsalted butter 
1/4 teaspoon salt
150 grams confectioners sugar
1 tablespoon flour 
two lemons
Food coloring

How you make them!
Start by making the batter: 
Step1: Preheat your oven to 175°C
Step2: Mix together Flour, baking powder, baking soda, vanilla sugar and salt in a bowl. 
Step3: In a large bowl (or stand mixer) whisk your eggs with an electric mixer for about 30 seconds. 
Step4: Add the sugar and mix for another 30 seconds.
Step5: Add the olive oil and lemon juice to the eggs and combine well on medium speed. 
Step6: Add the dry ingredients in 3 additions. 
Step7: Add the milk. 
Step8: Spread out you cupcake liners on an oven tray or in a cupcake tray and fill 23rds of the liners with batter. 
Step9: Bake for about 15-20 minutes until they're golden brown on the outside. You should be able to stick a toothpick into the middle of the cake and have it come out clean. Let them cool.

Make the frosting: 
Step10: Use the small holes on a grater to grate the lemon peel of of the lemon. 
Step11: Mix together the butter and the lemon peel. 
Step12: Add the confectioners sugar. 
Step13: Add the juice from one lemon. Add it carefully so that the frosting doesn't curdle. 
Step14: Add the flour and then the food coloring. 
If your frosting is to soft more flour and confectioners sugar and if it's too hard add more lemon juice or.  
Step15: Put the frosting in a piping bag and pipe it on top of the cupcake.

Instafavorites from August

Got to make my own pizza at work, I thing enjoyed it a bit more then normal person would. I'm easily amused.. // Probably one of my favorite days of the whole summer, spent the whole day with my coworkers playing video games, eating pancakes, went up to the northern part of the island to a forest called ''trollskogen'' and then we ended the day at my place, sitting by the fire and making smores. // Spontaneous shopping trips are always the most successful ones.

Super simple chocolate cake

Some times when I was a like 12-13 my friend an I would make these and bring them to school (oh memories). Everyone loved them because let's face it, who doesn't love chocolate cake?!
So if I ever had to host a kids birthday party this is probably something I would make. 
It is super-super-simple, really delicious and you can serve it on a plate or just with a napkin.
It takes about 45 minutes to make.

What you need: 
For the cake: 
150g butter
2 eggs
3dl sugar
3 teaspoons baking powder
2 teaspoons vanilla sugar
4 tablespoons cocoa powder
1.5dl milk
4.5 dl flour

For the frosting: 
50g butter
50g dark chocolate
4 tablespoons strong coffee
1 tablespoon cocoa powder
2 teaspoons vanilla powder
3 dl confectioners sugar 

Topping: 
Sprinkles or coconut flakes.

How you make it: 
Start making the cake: 
Step1: Preheat your oven to 225°C.
Step2: Start melting you butter. 
Step3: While your butter is melting mix the eggs and sugar together until they've become white and fluffy. 
Step4: Add the vanilla sugar, baking powder and cocoa powder and combine it well with the egg mixture. 
Step5: Add the milk half a dl at a time and in between each addition of milk add 2 dl of flour and then just add the last 0.5 dl of flour after. 
Step6: Ad the melted butter to the mix. 
Step7: Butter an oven dish and then spread out the batter in an even layer. 
Step8: Bake for 15 to 20 minutes. You should be able to stick a toothpick in the middle and have it come out clean. 

Make the frosting while the cake is in the oven: 
Step9: Melt the butter and add the chocolate to the butter so that it melts. 
Step10: Add the coffee, cocoa powder and vanilla powder. Combine it well and make sure that there are no lumps. 
Step11: Add the confectioners sugar one dl at a time. 
Step12: Spread it out over the cake so that the cake is covered by a shiny layer of frosting. 
Step13: Sprinkle some sprinkles or coconut flakes on top. 
Step14: Cut it into pieces. Doesn't get easier! 

Store it in the refrigerator until you want to serve it.

Birthday cake!

This cake is very dense. But the good thing about that is that if you are a beginner when it comes to stacking cakes dense cakes are a lot easier to work with. They are easier to slice and easier to stack.
I'm a total beginner when it comes to stacking cakes, I think this is my fifth or sixth one but it is the first one that really proud of! 
I used this recipe but made some slight changes to it. It takes a total of about 4 hours to make

What you need:
for the cake:
300g flour
330g sugar
2 tablespoons baking powder
1 teaspoon salt
8g gelatine powder
1, 25 dl olive oil (yes, olive oil)
2 teaspoons lemon juice
2.5 dl water
7 eggs
2 tablespoons sugar

For the frosting:
1.5dl butter
150g dark chocolate
1.5 dl cocoa powder
500g confectioners sugar

How you make it:
Start with the batter: 
Step1: Preheat your oven to 160 degrees. 
Step2: Mix your flour, sugar, baking powder, salt and gelatine powder in a bowl, make sure that there are no lumps. 
Step3: ''dig a hole'' in the middle of the dry ingredients. 
Step4: Separate your egg whites and yolks and put them in different bowls. 
Step5: Pour your olive oil, lemon juice, water and egg yolks into the hole but don't mix them in. Just leave them there.
Step6: Whisk your egg whites with two tablespoons of sugar until you achieve soft peaks. 
Step7: Mix together your flower mixture. 
Step8: Fold in your egg whites in three additions. Use a spatula to fold them in to the batter. 
Step9: Line two pans that are 20cm in diameter with baking paper and divide the batter evenly between them. 

Time to bake the cakes:
Step10: Bake in the oven for an hour. You should be able to stick a toothpick into the middle of the cake and have it come out clean. 
Step11: When you take the pans out of the oven spread out a piece of baking paper and place the cakes up side down so that the pans cover them like a lid. That way you make sure that the moisture stays in the cake and it doesn't become dry. Leave them there for at leas two hours. 

Time to make the frosting: 
Step12: Melt the butter and chocolate in a heatproof bowl over a double boiler. 
Step13: In another bowl mix the confectioners sugar and milk. 
Step14: Pour the butter and chocolate into the milk-mix and combine well. 
Step15: Add the cocoa powder. 
If you think that it's still to sweet you can add more cocoa powder or coffee to balance it out. 

Assemble it: 
Step16: Cut the cakes in half (horizontally of course). 
Step17: Place one of the cake layers on a cake stand. 
Step18: spread out a layer of frosting on top of the cake with a spatula or a dough cutter then put another layer of cake on top. Repeat this until you have used all the cake layers (or as many cake layers that you want to use, I stopped at three). 
Step19: clean of the sides of the cake with the spatula and put it in the refrigerator for 15 minutes. 

Cover the cake: 
Step20: With a spatula put the last bit of frosting on top of the cake and on the sides and then smooth it out with your spatula or dough cutter. If you want to make the process simpler put the cakes stand on top of a turntable. Make sure that it's centered. 
I toped my cake with a little bit of sprinkles. 

Store it in the refrigerator until you want to serve it. 


As you can see on the picture I still have to work on my layering skills. But at least the cake tasted delicious and looked good on the outside.
