I just tell them to eat until they can't eat anymore and it's usually gone in one or two days.
What you need for the cake:
2.5 dl sugar
3 dl flour
1 tablespoon vanilla sugar
3 teaspoons baking powder
1.5 teaspoons cinnamon
1 teaspoon cardamum
1 teaspoon ginger
1 teaspoon nutmeg
5dl grated carrots
And then for the frosting:
6 dl powdered sugar
The peel from two limes
200g cream cheese
How you make it:
Step1: first preheat your oven to 150 degrees celsius mix the eggs and the sugar together till the mixture gets lighter and fluffier.
Step2: mix all the dry ingredients together in a separate bowl (so all the ingredients thatvare left except the butter and the carrots).
Step3: start melting the butter and then let it cool. while the butter cools down to room temperature mix the dry ingredients into the egg mixture.
Step4: grate the carrots and then add the butter and then the carrots to the mixture.
Step5: cover the sides of a round pan with baking paper and the pour the mixture into it.
Step6: bake it for about 50 minutes to an hour then let it cool.
Step7. While the cake is in the oven make your frosting which is really easy. Grate the peel of of the two limes and then just mix all the ingredients together and the refrigerate until you use it.
Step8: What I did was that I cut the cake into two halves and then put frosting in between the two pieces and then just covered the top. You can also just skip the part where you fill it and just cover the cake with the frosting. Make sure that you put the cake on the plate or cake stand you want to serve it on before you put the frosting on the cake, otherwise you're just going to mess it up when you try to move it.
And well.. Now you're done! :)
