London baby! - as Joey would say.

So now I finally have something big to look forward to at the end of this summer (except for my 20th birthday, that I will most likely spend all alone with my nose buried in my books since I have exams that start two days later). 
I haven't been to London in soooo long, since I was 11 or 12 so I jumped at the opportunity to go and and visit a friend who lives there! Excited!!

Snicker Cookies

What you need:

1dl sugar
350g peanut butter
2dl light syrup
2dl grounded coconut
1 liter rice crispies
200grams dark chocolate

How you make them:

Step1: Cook the sugar, syrup and peanut butter in a pan for about five minutes on low heat. 

Step2: take your pan of the stove and add the coconut and the rice crispies. Mix it all together.

Step3: Spread the mixture out on a sheet of baking paper and (that you've put on a tray or a baking pan) and flatten it until it's about a centimeter thick and compact. 

A. Easy way:
Step4: Melt the chocolate and pour it over the mixture. Spread it out to a flat layer and put it in the freezer for about 10 minutes. 
Step5: Then you can cut them into small pieces with a knife. 
Step6: After you've cut them put them back into the freezer. 
Take them out of the freezer about 10 minutes before serving them. 

B. The more time consuming way:
Step4: Put the mixture in the freezer for about ten minutes without the chocolate then take it out and use a cookie cutter to cut pieces out of the now harder mixture.
Step5: Melt the chocolate and spread it out on top of each little cookie. 
Step6: put the cookies back into the freezer.
Take them out of the freezer about ten minutes before serving them.

Chocolate balls

Takes about 20 minutes to make and it's really easy! 

What you need:

100g butter at room temperature
1.5 dl sugar
3 tablespoons coco
4dl oats
One teaspoon vanilla sugar 
one tablespoon espresso or normal coffee
2dl grounded up coconut, sprinkles or anything else you would like to roll them in. 

How you make them :

Step1: Combine all the ingredients to a very sticky dough. Make balls in any size you like you can make big ones like the ones on the picture on just bite size pieces. 

Step2: Roll them in grounded up coconut. You can also use confectioners sugar, any types of sprinkles or nuts, whatever you think will go with the chocolaty taste. I chose to make two different ones, so one with confectioners sugar and one with coconut. 
The easiest way to roll them is to just use a wide bowl and but some of your grounded coconut in it and just roll it around till the ball is covered in it.

Step3After you've covered them in your delicious choice of topping put them on a plate and put them in your refrigerator for a few minutes!

Potato gratin

Takes about two hours to make.
One of my favorite foods as a child was potato gratin and I still love it, it is quite easy to make but it takes a while. 

What you need: for about 4 portions
8 potatoes
One teaspoon of salt
One teaspoon of white pepper
2 teaspoons of chives
3dl heavy cream

How you make it:

Step1: Preheat your oven to 200 degrees Celsius.

Step2: Peel and slice the potatoes into 3-4mm thick slices. 

Step3: Put all the slices into a big bowl and add the salt, white pepper and chives. Make sure that they're are well divided thru out the potato slices. 

Step4: Put the potato slices in a heatproof dish and spread them out to an even layer. then pour two dl cream on top of them. Let the potatoes cook for an hour (add the third dl after half an hour).

One of my favorite things to eat potato gratin with is grilled pork and a simple salad - delicious!
