Lime Daim

What you need: 

2 dl light syrup 
2 dl sugar 
2 dl cream

2 Limes (only the peel)
2 tablespoons butter 

200g dark chocolate

How you make them: 

Step 1: Cook the syrup, sugar and cream together until its has a dark golden brown color and then do what we in Sweden call ''kulprov'' which is when you take some of the mixture on a spoon, put the spoon in cold water and then try to make a really small ball out of the mixture, if you can that means that it's done and you can take it of the stove. 

Step 2: Grate the lime peel off of one lime and mix the peel and the butter into the mixture. 

Step 3: Melt the chocolate

Then there are two ways you can ''assemble'' them. 

A: This is the easy way, you can just spread out the mixture on baking paper. 

Let it cool until its become hard and then spread the melted chocolate on top. 
Before the chocolate has hardend use the second Lime, grate the peel and sprinkle it on top.  

Let the chocolate become hard again by puting it into the fridge and then just break it into pieces.  

B: The more time consuming way: Put baking paper in a form that you think will work and then spread the mixture out on top of the baking paper so it's about 1cm thick. Let it cool down but not for too long! You still have to be able to cut thru it with a knife!

Take the mixture out of the form and then cut it into bite size pieces.

Stick a toothpick into it and then dip it into the melted chocolate. 
Spread out baking paper and then place the pieces on top so that you can easily remove them when they're done. 

Before the chocolate hardens use the second lime, grate the peel and sprinkle it on top to make them look pretty.

Place the pieces in the fridge and then take them out and enjoy!

John Mayer playing at the Hollywood Bowl

In August 2010 me and my dad went to LA to see John Mayer play at the Hollywood Bowl and it is the best concert I have aver been to and one of the best memories I have with my dad! 
Yesterday my dad sent me an email saying that John Mayer is playing at the Hollywood Bowl again on October 5th and wondered if I wanted to get tickets, of course I said yes! I'm so happy that I'll be able to see him play in the Bowl again! So excited!!

For those of you who don't know what the Hollywood bowl is, It's an amphitheater that is located in the Hollywood hills and has been there since 1922. It's absolutely amazing to sit there and listen to music with the Hollywood sign in the background. About 18.000 people fit in the theatre so it's the largest natural amphitheatre in the states.

Lovely weekend!

This weekend me and Amanda went home to her hometown because one of her friends was having a birthday party. It was really nice to see where she's from and meet her family!
We had dinner with her family, then we got ready and went to the party. 
In the morning Amanda little brother Erik woke us up and had made us breakfast! So nice!

Gooey Chocolate cake aka Kladdkaka

Chocolaty deliciousness on a plate! 
This is definitely one of my favorite desserts! So simple to make and so delicious!

What you need : 

2 eggs 
3dl sugar
100g butter
1 tablespoon vanilla sugar
1 tablespoon cold coffee
4 tablespoons cocoa
1 1/2 dl flour
1 teaspoon baking powder

How you make it: 

Step 1: preheat your oven to 175 degrees Celsius

Step 2: Start melting the butter while you whisk the eggs and the sugar together until its become white and fluffy. 

Step 3: Let the butter cool and then add it to the eggs and sugar mixture along with the other ingredients. 

Step 4: Pour the batter into a form that you have already lined with butter to prevent it from sticking to the sides. Then put it in the oven for about 15-20 minutes. 

Serve with whipped cream.

Chocolate chip

Yesterday me and Amanda were responsible for the lunch served here at Helsingkrona and we decided to make chocolate chip cookies for dessert again if you want the recipe you can find it here 

Great trick! 
If you're baking and want to make sure that all your cookies are almost the same size ro
 that your cupcakes have the same amount of batter so that they will bake evenly, use an
 ice cream scoop with one of those wires in it! It's really efficient and gets the
 batter/dough out easily.

Great app for long distance couples

Just really have to say how much I love this app! It's called 'Couple' (but you can also find it under 'Pair'). 
If you both have Iphones or just phones with touch screens it's amazing but it also works if you have a tablet/Ipad, so yeah.. anything with a touch screen that has internet and can download apps...  
You can send each other pictures/videos/voice messages/drawings and you can do a bunch of other stuff.  The cute thing is that it's just between you and your girlfriend/boyfriend so it's just about your relationship.
Best of all : It's free!

Red and green layered smoothie


Step 1: First mix 3 kiwis and half a stem of celery in a mixture and then pour it through a sieve to get all the seeds out and then pour it into a glass. (if you would like to make it more green just add some green food coloring..) 

Step 2: Mix raspberry and mango and then again, pour it through a sieve to get all the seeds out and then add orange juice to that it gets the same consistency as the green part of the smoothie. Then pour it on top.  

Those steps are just to make it look pretty, obviously to get all the flavors together you'll have to mix them together and then it just turns red and yummy.

Five Details

What happens when i get really really bored!

 three times because I get so tall when I wear heels.. 

My dad loves his cowboy boots,  everytime he goes to Wyoming he buys a pair,
these are just a couple, I think he has another three or four pairs.

What you need: 
3 tomatoes 
2 garlic cloves 
Olive oil
A pinch of salt 
A pinch of pepper 

How you make them: 
Step1Dice the tomatoes and cut the garlic and basil into tiny pieces and mix the tomatoes basil and garlic together and add the salt and pepper. 
Step2: Heat up a pan and add about a teaspoon of olive oil and when the oil has become really hot ads the tomato mixture and let it ''fry'' for about two or three minutes and then put it in a bowl.
Step3: fry the bread either in a frying pan or just toast it in a toaster. 
Step4Place the tomato mixture on top of the bread, sprinkle some basil on top and then serve it.

I wanted to try some new mixtures so I made a batch of chocolate cupcakes with 3 different toppings. First I made four with marshmallows on top that I just put on top of the batter before I put them in the oven. On the others I have a coffee and chocolate frosting and then on the rest I have a lime and chocolate frosting.

Stress -Panic - Home.

Today I went back home to Luxembourg and I wish that I would be able to say that I had a calm morning, where everything went as it should and there were no problems what so ever... But no. 
At 4.40am a taxi was going to pick me up from my building and drive me to the train station where I was going to take the train at 5 and then have enough time to walk around at the airport till  my plane left at 8. 

I stayed up till 3am and thought that I would just take a quick nap and then wake up at 4.. Did I wake up at 4? No. I woke up at 6.25... F***. I called a taxi, took the next train and actually got to the airport at 7.15.
I don't think that I've ever woken up and gotten out of the house that fast before in my life! 

Thankfully the Plane was delayed so I got to walk around at the airport and calm down.. Insane! 

But I got home, had lunch with Nathalie who is a good friend of mine! 
In our senior year me and Nathalie always had a long lunch on Mondays so we would always go to this place called Coffee Lounge and eat lunch there. 
So obviously we did the same thing today, for old times sake.

After that we walked around in Town and then she had to leave so I went to Auchan and bought some stuff before I had dinner with my parents.

One of those weeks where my social life has been non-existent

My life has basically been non-existent this week, I haven't done anything else but study and it feels like my brain has turned into a giant bowl of soup.. On top of that my diet has basically consisted of red bull with raspberry filled ice cubes.. Really really healthy! NOT!

What i call ''Almond fish''

What you need:

400g frozen fish (codfish is what i usually use) 
50 g butter
1 dl breadcrumbs
1/2 dl slivered almonds
1/2 teaspoon turmeric
2 pinches of salt 
1 garlic clove
1/2 chopped parsley 

How you make it:

Step 1: Preheat your oven to 200 degrees Celsius.

Step 2: Cut the fish in portion sized pieces (or a size that you prefer) and put the pieces in a dish that you have already smeared with butter. 

Step 3: Melt the butter and add the breadcrumbs, almonds, turmeric, salt, garlic and parsley and stir it together. Spread the mixture on top of the fish. I like to sprinkle just a couple of pieces of almonds on top so that it looks pretty. 

Step 4: Put the dish in the oven for about 25 minutes and then serve with something netural like potatoes or rise.
